Street Corn Chicken Salad
I've never written a recipe before...
…but this smacked so hard, I made a substack specifically to share it. The tastiness should be experienced by other people.
What I’m NOT going to do is write a rambling anecdote before the actual recipe, so let’s get to it.
Ingredients:
2 (Boneless, Skinless) Chicken Breasts
2 Limes
1 Can Sweet Corn
1/2 Red Onion
1 Bunch Fresh Cilantro
Mayonnaise
Seasonings:
Tajin
Chili Powder
Red Chili Flakes
Garlic Powder
Salt+Pepper
Preheat your oven to 400 and cut some slits in your chickens. While the oven is heating, dice the onion and the cilantro.
Squeeze one of the limes over both chickens and season them with Tajin and chili powder. I season with my heart and I encourage you to do the same. I won’t be doing measurements for seasoning.
Bake until cooked (my oven this is 35 minutes or so.) I like my chicken a little crispy on the outside so if you have a different preference for temperature/time, do you.
When the chicken is done, set it aside. While it’s cooling, grab a big bowl and strain your can of corn in the sink. Dump the corn in the bowl, then add your onion and your cilantro.
Once the chicken is cool, shred it up. toss it in the bowl and squeeze in your other lime. Give everything a mixaroo so it’s blended.
Seasoning time! Add all of the seasonings I listed above, and season with your heart. Heavy is the hand that adds the seasonings. this should be bright and full of flavor.
Finally: mayonnaise. Again, I will not be giving precise measurements. Add only the amount that will bind the ingredients together, or add big globs of it. It’s your meal. Do what you like!
Ta-da! You now have enough chicken salad for 4 wraps. You could also scoop it onto tortilla chips or tostadas. I add a bit of cheese because I’m a cheese goblin, but it’s delicious without cheese, too.
I wanted to add cojita cheese to this, but I couldn’t find it at the store. I bet that would smack, though.
I imagine there’s a possibility for substitution if mayo doesn’t jive, but I can’t think of one. Greek Yogurt might not be a good match. If you think of a healthier option, do let me know!
